Iโve decided this month is all about celebrating Mexican cuisine โ not just because of Cinco de Mayo (though I hope you found your own fun way to enjoy it!), but because this food is bursting with fresh ingredients, bold colors, and amazing flavors that just feel right as we head into summer.
I want to remark how plant-based eating can be super simple and satisfying, no matter what kind of food you love โ and Mexican and Tex-Mex dishes are the perfect proof. Think street-style tacos with oyster mushrooms, cozy tomato soups, hearty quinoa bowls, or cheesy dairy-free quesadillas... this cuisine makes it so easy to go plant-based without missing a thing.
So this May, letโs wrap kindness โ and some seriously bold flavor โ in a warm corn tortilla and celebrate food thatโs full of heart, culture, and good vibes. ๐ฎ
