Spring is officially here, even if it doesn’t quite feel like it at home. We’ve had nothing but rain, wind, and clouds for the past two weeks, and honestly, I’m not used to this kind of weather after living in Spain—it’s driving me a little crazy, haha!
Yesterday, I shared a list of 10 Vegan Spring Soups to bring some spring vibes, even if the weather isn’t cooperating. Fingers crossed for some sunshine soon!
This week, I also posted one of my favorite Asian noodle soups—Vegan Laksa. A few of you mentioned that you’re planning to get the ingredients to try it out, and I hope you love it as much as I do! I learned how to make it while living in Malaysia, and it’s truly one of my favorites.
