Last week, we harvested our butternut squashes, and I don’t think any of us knew we had that many! It’s been very hot here in Spain, so we barely go down to the garden, only to harvest whatever we need for the day, so we didn’t spend long enough down there to count the butternut squashes.
We had some rainy days last week, so we thought it was the perfect time to harvest all the squashes! I think we’ll be eating butternut squash for the next six months 😂

Are you going to get some recipes with butternut squash from me? Definitely! This time of the year is the perfect time to make the most of this beautiful ingredient. Also, it comes with many nutritional properties so if you haven’t yet, you will want to include butternut squash in your shopping list regularly.
For now, I’ll share our top three recipes we make at home using butternut squash: Curry, pasta sauce, and risotto. The risotto is vegetarian, but you can easily make it vegan by using plant-based butter and cheese.
1. Butternut Squash Curry
This curry is another version of our popular Peanut Curry, but we use roasted butternut squash puree instead of the peanut sauce. This recipe uses a full butternut squash; we use half for the sauce, and we cut the rest into cubes and roast them to add later to our curry. For this recipe, we add some curry paste (you can add red or yellow), but sometimes, we skip this part to make it kid-friendly, and the taste is still excellent!
2. Butternut Squash Pasta
Our Butternut Squash Pasta is an easy pasta meal that the whole family can enjoy after a busy weekday. When we have more time, we place the cooked pasta with the sauce in a casserole dish, add some vegan cheese, and bake it until crispy, and we have our own version of vegan mac and cheese.
3. Butternut Squash Risotto
We’re actually making this for lunch today. We don’t cook risotto often, but when we have butternut squash at home, this recipe always comes to our minds. Making risotto can sound difficult to some of you, but it’s a one-pot meal that’s very simple to prepare.
