Finally, a Queso Dip that is Vegan and Made with Natural Ingredients

I wanted to share today a wonderful recipe thatâs still not on our blog (I donât know why) but that youâll thank me for once you try it!
We started making this vegan queso years ago to top our loaded nachos, serve as a dip, or add as a sauce to our fajitas, quesadillas, or tacos.
We normally make it once a week, with tortilla chips and toppings like beans, avocado, fresh tomatoes, and jalapeños. If you are not making this for dinner yet, you should. And, of course, when we make loaded nachos, this vegan queso is the star of the dinner. Our kids always end up fighting to see whoâll get the last bit of the queso dip đ€.
The ingredients used for this queso are simple and easy to find, and the process couldnât be easier! You can even try it this weekend and let us know what you think.
Ingredients
For this queso dip youâll need cashews (presoaked), turmeric, smoked paprika, garlic powder, salt, lemon juice, water, nutritional yeast, and maple syrup:
100 g overnight soaked cashews
3 tablespoon nutritional yeast
1 tablespoon lemon juice
1 teaspoon garlic powder
1/2Â teaspoon smoked paprika
1/4 teaspoon turmeric
3/4 cup water
1 teaspoon maple syrup
1/2 teaspoon salt
The method is pretty straight forward: Youâll need to add all the ingredients in your blender, and blend until you have a very smooth queso dip.
Some Tips
To give it a deeper yellow color, you can add more turmeric
You need to soak your cashews for at least 6 hours to make a very smooth dip, otherwise it could come out grainy, to speed up the process, you can soak the cashews in warm water for a shorter amount of time (1 hour).
If you want to give this dip a more garlicky taste, you can add 1 roasted garlic when blending the ingredients.
For a spicy dip, add spicy paprika, or red pepper flakes.
