Hey there!
Normally, I’d apologize for vanishing for 15 days, but honestly… it needed to happen. These past few weeks have been crazy at home. We’ve been in the middle of renovations, bought a new car, started a business, and—surprise!—we found out we’re expecting baby number three! The first few weeks totally wiped me out, and on top of that, my husband was away on a work trip, so I was solo parenting and running the household. Needless to say, I didn’t have the time or energy to even open my laptop. I felt guilty about it at first, but looking back, I really needed that break.
I’ve also been diagnosed with gestational diabetes again, which I was expecting since I had it during my previous pregnancies, but this time it’s hit me harder. It’s taken a bit of the joy out of cooking lately, but I’m committed to adjusting and continuing to create recipes that work for both me and my family.
My original plan for April was to focus on Mediterranean cuisine and re-release our Mediterranean Kitchen e-book with some fresh new recipes… but clearly, that didn’t quite happen. That said, I will still be sharing tips and recipes over the next couple of weeks, before shifting gears in May to dive into Mexican cuisine for Cinco de Mayo celebrations, and use the month of June to explore all about the Mediterranean cuisine!
I’ll be using what’s left of April to post some fun and festive recipes—and hopefully squeeze in a few new exclusive ones too, if time allows. I’ve really missed being here and connecting with you all. Feeling so grateful to be part of this amazing community. 💚

Vegan Essentials for Easter
There is an array of ingredients that will help you to create your Vegan Easter Recipes if you have them stocked in your pantry. Here are some essential ingredients we typically recommend for this festive season if you don't already have them in hand:
Dried herbs. Dried herbs like basil, rosemary, and thyme can elevate the flavour profile of your dishes. You can create a complex broth or incorporate it directly into your recipes.
Spices. Turmeric, coriander, cumin, nutmeg, and black pepper are among the popular spices commonly used in Easter dishes. Be sure your spice rack is well-stocked!
