My plan was to send you this recipe next week, but the truth is that it was such a great discovery for me that I made some time today to get it ready for you to have it.

I made similar recipes before, combining zucchinis and Mexican flavours, but this one was ABSOLUTELY delicious, and also, the perfect recipe to keep your blood sugar level steady. Dealing with diabetes when you have two small kids is not as easy as one would expect, but recipes like this are a great option for a busy day to still enjoy something filling and so so tasty.

Calabacitas is a Mexican dish that combines fresh ingredients, spices, and for this recipe, I added chipotle paste, which is totally optional but so so recommended if you enjoy spicy food. Also, I served it with quinoa as it’s a great source of protein that also makes the dish hearty and filling.

You can totally make this during a busy weekday, as it takes just 5 minutes to prepare and 20 minutes to cook. While the calabacitas are cooking, you can prepare the quinoa. And you know what was the best part of this recipe? Keeping the leftovers for the next day to have with tacos and marinated oyster mushrooms.

If you don’t have chipotle paste, you can use chipotle sauce; our favorite is definitely Cholula Hot Sauce.

Variations to our Calabacitas

  • Make it kid-friendly. My kids didn’t eat this as they were in school (sorry kiddos), but if I make it for them, I cut the zucchinis into smaller pieces, and also skip any spicy ingredients.

  • Add more protein. If you prefer to serve this recipe with rice, wraps, or tortillas, you can add some shredded tofu or oyster mushrooms.

  • Make it vegetarian. I used vegan feta cheese to top our Calabacitas, but you can use shredded mozzarella or any other cheese you like.

  • Add some chopped cilantro. I wish I had some cilantro for this recipe, but we made it right after a two-week holiday, and cilantro didn’t make it to the shopping list.
