Maybe I’ve already said this before, but this pregnancy (my third) I’m craving loads of fresh fruits and veggies, which is perfect for the summer season, especially with our garden giving us loads of tomatoes, cucumbers, zucchinis, and peppers. I feel so so blessed to be living in Mallorca, by the Mediterranean sea, even if that means having unbearable temperatures for the summer.
I think this is the main reason why I’m making a summer recipes series, just feel like people need to eat more fresh food, so sorry in advance if I’m spamming you with delicious fresh summer recipes that you’ll need to try 😅.
Would you believe me if I told you I had a dream about this sandwich? It’s true! I’ve been thinking about this recipe for the last days so I finally got to make it yesterday with all the bits I wanted to put inside this A-M-A-Z-I-N-G Greek-style Sandwich.

From Sunday and for a few weeks I’m going to be on my own with the kids, right before they start they school holiday (Yeeei!😂 ) I won’t lie, I’m a bit panicky as I’m 24 weeks pregnant and this belly doesn’t stop growing, and my kids are only 3 and 6 years old. Some things that will definitely make my life easier this summer are meal planning, easy recipes, freezer meals, and batch cooking, loads of it.
They have summer camp for two weeks but they’ll still come back for lunch which in Spain is expected to be a proper meal just like dinner. So, wish me luck in this solo parenting trip for the next 6-7 weeks.
I’ll be preparing a meal plan next week with super easy recipes (like this Greek-style sandwich) including some that are also good for freezing. Let me know if you want me to send you a copy and I’ll definitely send it your way once I have it ready to go! My idea is to include easy but nutritious and filling snack ideas to prepare for the summer camp and quick and easy lunches and dinners, that I can mostly leave ready on the Sunday.

This Greek-style Sandwich is 100% plant-based, even though you can make it with regular feta cheese for a vegetarian option, and also, can be made gluten-free by using gluten-free sandwich bread.
What you’ll need for this recipe:
1 block of vegan feta cheese. I like Violife greek-style cheese, but maybe you can find other brands in your supermarket. For us is not too easy to find different alternatives for this product. You can make this sandwich using regular feta cheese for a vegetarian option.
