Well, for us, today is Friday. Kids are off school till next Tuesday, so we’re planning on taking it easy these days and just enjoying some family time doing some jobs around the house, meeting with friends and family, and celebrating Luca’s 5th birthday which is coming very soon!

Now, let’s talk about this mouth-watering Wonton Soup…

How to make Vegan Wontons
For this recipe, we use store-bought wonton wrappers. You can follow our recipe by buying vegan wonton wrappers (Twin Marquis or Nasoya brands have vegan options), or you can simply buy already-made vegan wontons, or if you have more time in your hands, even make your own wonton wrappers.

What you need for the Wontons
12 vegan wonton wrappers
1 small carrot
3 fresh shiitake mushrooms
4-5 napa cabbage leaves
2 spring onion
2 oz tofu ( ½ block)
2 garlic cloves
A small piece of ginger
1 teaspoon five-spice powder
¼ teaspoon white pepper
½ tablespoon dark soy sauce
Finely chop all the fresh ingredients, crumble the tofu, and mince or grate the ginger and garlic. Add all the fresh ingredients with the tofu in a large mixing bowl and add the spices and dark soy sauce. Combine all the ingredients until well-mixed.
Now, to fold the wontons, Place one of the wrappers on your hand, and add a teaspoon of the filling in the center of the wonton.
Use your finger to moisten the edges of the wrapper and fold the wrapper into a triangle. Seal well.
Moisten the left corner with a little bit of water, hold the bottom two corners of the triangle, and bring them together
Place the shaped wonton on a plate, and repeat. Make sure the wonton wrapper is sealed properly so the filling stays inside while cooking the wonton.
For the wonton soup
We use spring onions or scallions, soy sauce, vegetable stock, sesame oil, salt, and black pepper for the wonton homemade broth.
Heat some vegetable oil in a cooking pot and add finely sliced scallions. Let them cook until they start to brown.
Add the vegetable stock, and bring to a boil. Then carefully add the wontons.
Simmer for 2-3 minutes or until the wontons are afloat. Add the soy sauce and sesame oil, and season with salt and pepper.
Transfer one portion of the wonton soup to a serving bowl, garnish with fresh scallions, and enjoy!
This Wonton Soup makes for a complete main dish. It's filling and hearty, but if you want something heartier, add wheat or rice noodles.
